St. Patrick’s Day Green Pea Fritters

We decided this weekend is the perfect time to embrace the warmer weather and hints of spring so we’ve added a little green into our day and into our food.I have been working on a recipe for veggie bites for some time now, but I haven’t been able to narrow down a taste and texture that my whole family agrees on. My youngest has a serious passion for green peas and eagerly suggested I use them in my recipe. And you know what, she is on to something! Peas are the perfect texture for these veggie fritters and they are one hundred percent kid approved. Since peas are naturally sweeter in flavor, they balance well with the other veggies and healthy herbs. Add a side of homemade tzatziki sauce and dinner is covered!

Baked Green Pea Fritters with Tzatziki Sauce
Gluten-Free, Vegetarian
yield: about one dozen fritters

INGREDIENTS
2 cups frozen peas, ¼ cup reserved
1 cup almond flour
¼ cup chopped parsley and cilantro, mixed together
1 cup riced cauliflower (broccoli will work too)
2 eggs
salt & pepper
olive oil or coconut oil

DIRECTIONS
1. Heat oven to 400 degrees. Line a baking tray with parchment paper and grease with olive oil or coconut oil.
2. Place all ingredients, with the exception of the ¼ cup peas, in a food processer and pulse until combined. Make sure not to over mix.
3. Stir in the reserved peas.
4. Using a tablespoon, roll into balls and press into round patties that are about ¼ inch thick. Place on the parchment.
5. Bake for 10 minutes. Using a spatula, carefully flip over and bake for another 10 minutes.
6. Allow to cool and serve with tzatziki sauce.

Tzatziki Sauce
Gluten-Free, Vegetarian
Yield: ½ cup

INGREDIENTS
½ cup plain yogurt
¼ cup finely chopped cucumbers
1 Tbs. lemon juice
1 garlic clove (optional, I omit due to an allergy)
salt

DIRECTIONS
1. Whisk all ingredients together until combined and creamy.
2. Serve immediately.
3. Store in an airtight container for up to five days.

I don’t know about you but the Holidays totally exhausted me and I was beyond ready for the new year to start! This year we wrote down some of our family goals which included eating healthy. This tends to be a challenge for me because I am a busy mama but I am determined to make some lasting changes that are fun and delicious.

I recently discovered Great Day Farms hard-boiled eggs in the Deli section of Walmart. I brought them home and decided I would sit down with the kiddos to make some fun (and tasty) egg characters. We gave them seaweed, food coloring and veggies and let them think of a few characters to make.

Since we are going through a gardening phase in our house – a bee was the first thing that the kids thought of. A tiger and mouse were were also picked!

What you need //

Knife
Food Coloring + a bowl with warm water
Scissors
Carrots
Seaweed
A package of Great Day Farms Hard-boiled Eggs (peeled and ready to eat!)

How // Bee

Soak your hard-boiled egg in a bowl of warm water and place a few drops of yellow food coloring in the water.
While your egg is soaking, cut thin strips of seaweed to make the bee stripes.
Once the egg is yellow, pull it out of the bowl and place on a plate.
Cut one side of the boiled egg so it sits longways.
Wrap the strips of seaweed around the bees body.
Cut a slit on the top of the bees body (this will be for the wings).
Use seaweed to cut out two wings for the bee.
Put the seaweed wings in the slits on the top of the bees body.
Create eyes with seaweed, nuts or edible marker.

How // Mouse

Cut one side of the hard-boiled egg so it sits longways.
Save the piece you cut to make mouse ears.
Make two slits on top of the mouse’s body for his ears and insert.
Cut out seaweed or use a edible pen for eyes and cut out small strips of carrot for whiskers and a nose. These can easily be stuck into his little body and kiddos love this part!

How // Tiger

Soak your hard-boiled egg in a bowl of warm water and place a few drops of yellow food coloring in the water.
While your egg is soaking, cut strips of seaweed for your tigers markings, whiskers, nose, mouth, eyes, and ears.
Have your kiddos decorate their tiger. We used a long strip of seaweed on the top of our tigers head and then smaller strips of seaweed on the tigers cheeks.
Cut two slits on the top of your tigers head and insert some seaweed ears.

The boys enjoyed making these and enjoyed eating them just as much. Using the Great Day Farms hard-boiled eggs (that are already peeled and ready to eat) made this super fun and less messy. They are also super delicious!

I can see myself grabbing them for an on-the-go snack because they are filled with quality protein and a fast snack I can take anywhere!

4th of July celebrations just call for soda bottles. I always envision scenes from the movie “The Sandlot” filled with neighborhood BBQs, baseball games, and of course, a tasty soda in a glass bottle. You can always buy them, but why not make your own? Turns out, it’s actually really easy to make your own soda WITHOUT a soda stream. You don’t need one! A soda party seems like a perfect idea for the kiddies. I’m picturing old glass bottles,  red, white, and blue clothing options, vintage picnic blankets, and baskets upon baskets of fruit.
