Sunflowers In November

We captured them.
With our eyes.
The withering sunflowers fading into the hot November sun.
The season was fleeting and quickly escaped our fingertips.
We caught them, barely, before they vanished.

Just like these sunflowers, autumn may be fleeting but we are holding onto every second. We are wrapping ourselves in oversized sweaters, hiding under the brim of large hats and sporting soft, comfy jeans for days. What is your autumn style?

A Magical Mermaid Birthday Party

There is something extremely magical about creating a child’s birthday party; the planning, the creativity, the thought process and the fun. When my daughter came to me with the grand idea of bringing a magical mermaid party to life I was on board and immediately let me creativity kick in. Before I start planning, I always like to pick a color palette and I thought soft pastels would be the perfect hue to accent an underwater themed celebration. While I love hosting events at my house, it’s not always conducive to a large group of children so we opted for a quaint, historical restaurant located in the heart of our downtown, which also happens to be our families restaurant. I set up one large table that would be used for eating, another medium table for the arts and crafts and then a small table for the face-painting station. Since I was set on using a balloon garland as my statement piece, I decided to keep the other decorations simple and natural. The cake itself made a wonderful centerpiece and I added seashells, succulents and confetti to the tables. Each girl received a starfish wand that my daughter and I assembled together. This would also make a wonderful craft for the party but instead we painted sand dollars.

In addition to the wands, guests took home a shell goody-bag filled with shell necklaces, bath bombs, nautical tattoos and hair ties. We set up an easy DIY photo station by hanging a white sheet and adding fish net and garland. To save time on the cake I ordered a simple, two-layered round cake with pink drip icing from a local bakery. I’ll be honest, this was the only glitch in this magical party. When I picked the cake up it wasn’t the shade of pink I requested, the mermaid tail was stuck in the middle and they added white flowers, which I did not request. I quickly ran to the craft store, purchased some shell molds, shell and nautical stickers and then picked up macaroons at the grocery store. I made a couple batches of chocolates using white chocolate and food coloring. These were so easy to make and they added a nice element of depth to the cake! I then added the macaroons, the stickers (I attached them to toothpicks) and a sprinkle of edible gold flakes. I was actually happy with how the cake turned out and used the leftover chocolates to decorate a batch of cupcakes.

Summer Sweets: Strawberry Lemonade Cupcakes

Did someone say summer sweets? Yes, please! We’ll take all the summer treats we can get, and throw in some shimmering sunshine, good friends and laughter and we’re all set. With a mixture of these elements summer is sure to be a success. We recently had the chance to get into the kitchen and whip up a batch of Strawberry Lemonade Cupcakes. This recipe is super simple and extremely kid friendly! They make the perfect dessert for a hot summer day. So grab your little ones, gather the friends and get cooking.

Our little bakers are wearing hair accessories by KNOT Hairbands. These classic pieces add the perfect touch of style to any clothing.

Strawberry Lemonade Cupcakes
yield: about 12 cupcakes

Ingredients:
1 1/2 cups all-purpose flour
1 tsp. baking powder
1/4 tsp. salt
1/2 cup butter, soft
3/4 cup granulated sugar
3 large eggs
1/2 cup whole milk
1 tsp. vanilla extract
2 Tbs. lemon juice
1 Tbs. lemon zest

Directions:
1. Preheat oven to 350°F and add cupcake liners to muffin tins.
2. In a medium bowl, mix together the flour, baking powder, and salt. Set aside.
3. Using the paddle attachment on your standing mixer, cream together the butter and sugar on medium until light and fluffy. Add in eggs, one at a time, and mix until just blended.
4. Add in vanilla, lemon zest, lemon juice and milk and blend. Slowly add in dry ingredients and mix until just combined. Do not over mix.
5. Divide batter evenly among prepared muffin cups and bake for 18-20 minutes, until a toothpick inserted in the middle of the cupcakes comes out clean. Remove from the oven and allow to cool. Cool completely before filling and frosting.

Lemon Curd Filling
In a medium saucepan, whisk together until light in color:
3 large eggs
1/4 cup honey
grated zest of 1 lemon
Add:
1/2 cup fresh lemon juice
6 Tbs. unsalted butter, cut into small pieces
Cook, whisking over medium high heat until the butter is melted. Then whisk constantly until the mixture is thickened and simmering gently for a few seconds. Using a spatula, scrape the filling into a medium sized mesh sieve set over a glass bowl. Stir in 1/2 tsp. vanilla. Let cool, cover and refrigerate to thicken.

Buttercream Frosting
4 cups powdered sugar
1 stick unsalted butter, at room temp
2-4 Tbsp. milk
1 tsp. vanilla
1 Tbs strawberry jelly
pink/red food coloring

In your standing mixer, beat together the powdered sugar and butter.
Then add the milk and vanilla and beat until smooth. Correct the consistency if needed by adding powdered sugar or milk. Once desired consistency is reached, add the jelly and food coloring.

To assemble the cupcakes:
Use a small paring knife to cut a small cone out of the center of each cupcake, about 1 inch deep. Spoon a small amount of lemon curd into the hole and replace the cone. Gently press the cone into place and smooth away any crumbs. Frost the cupcakes as desired. For these I used a large round tip and the swirl method. Hold your piping bag perpendicular to the cupcake. Start at the outer edge of the cupcake and pipe a circle around the outer edge. As you complete a full circle, move the piping bag slightly inward to create the next circle rotation. Continue piping, moving inward for three full rotations, plus a small one on top. Release the pressure and pull the bag away. **Make sure cupcakes are completely cooled, we rushed this step, which makes for runny icing.**

St. Patrick’s Day Green Pea Fritters

We decided this weekend is the perfect time to embrace the warmer weather and hints of spring so we’ve added a little green into our day and into our food.I have been working on a recipe for veggie bites for some time now, but I haven’t been able to narrow down a taste and texture that my whole family agrees on. My youngest has a serious passion for green peas and eagerly suggested I use them in my recipe. And you know what, she is on to something! Peas are the perfect texture for these veggie fritters and they are one hundred percent kid approved. Since peas are naturally sweeter in flavor, they balance well with the other veggies and healthy herbs. Add a side of homemade tzatziki sauce and dinner is covered!

Baked Green Pea Fritters with Tzatziki Sauce
Gluten-Free, Vegetarian
yield: about one dozen fritters

INGREDIENTS
2 cups frozen peas, ¼ cup reserved
1 cup almond flour
¼ cup chopped parsley and cilantro, mixed together
1 cup riced cauliflower (broccoli will work too)
2 eggs
salt & pepper
olive oil or coconut oil

DIRECTIONS
1. Heat oven to 400 degrees. Line a baking tray with parchment paper and grease with olive oil or coconut oil.
2. Place all ingredients, with the exception of the ¼ cup peas, in a food processer and pulse until combined. Make sure not to over mix.
3. Stir in the reserved peas.
4. Using a tablespoon, roll into balls and press into round patties that are about ¼ inch thick. Place on the parchment.
5. Bake for 10 minutes. Using a spatula, carefully flip over and bake for another 10 minutes.
6. Allow to cool and serve with tzatziki sauce.

Tzatziki Sauce
Gluten-Free, Vegetarian
Yield: ½ cup

INGREDIENTS
½ cup plain yogurt
¼ cup finely chopped cucumbers
1 Tbs. lemon juice
1 garlic clove (optional, I omit due to an allergy)
salt

DIRECTIONS
1. Whisk all ingredients together until combined and creamy.
2. Serve immediately.
3. Store in an airtight container for up to five days.

Gluten Free Pumpkin Waffles

There is something magical about autumn time in Ohio. The crisp earthy scent of leaves and wood that fill the air, the spices of vanilla and cinnamon that seem to always linger, and the bold, velvety colors that paint the landscapes. Autumn in Ohio is a true treasure that invokes all the senses. It’s only natural that we embrace this time of year and carry it into our homes, into our kitchen.

Since we don’t eat gluten in our home (and a long list of other foods due to my son’s Crohn’s disease) we came up with this simple, gluten-free pumpkin pancake recipe using almond flour, autumn spices and, of course, pumpkin!

GLUTEN-FREE PUPKIN WAFFLES | serves 4-6 |

Ingredients:

1 1/2 cups almond flour

1 tsp. cinnamon

1 tsp. ginger

1/4 tsp. nutmeg

1/4 tsp. baking soda

1/4 tsp. salt

1/2 cup pumpkin

3 Tbs. honey

1 tsp. vanilla

4 eggs

nonstick cooking spray or coconut oil

Directions:

  1. Preheat your waffle maker.
  2. In a medium bowl, add the dry ingredients and whisk to combine.
  3. In a separate bowl, add the pumpkin, eggs, honey and vanilla and whisk.
  4. Add the dry ingredients to the wet and mix.
  5. Grease your waffle maker and add 1/4 cup of the batter and cook until lightly browned.
  6. Serve with warm maple syrup and enjoy!

I don’t know about you, but we sure are ready for some of that summer magic! I wanted to create so many yummy treats for this St. Patrick’s Day, but as we all know, life gets busy and the daily grind tends to get in the way. It’s a good thing a little luck was on my side and my oldest son happened to create these healthy, colorful treats to help celebrate this festive day. Not only are they the perfect color, but they are packed full of nutrients and essential vitamins. Oh, and did I mentioned they are kid approved!

Kale Apple Smoothie (yield: 1-2 servings)

INGREDIENTS:
1 green apple, peeled and cored
1/4 cup kale
1/2 cup plain yogurt (we use homemade yogurt)
1 banana
1/2 cup apple juice, plus more for desired consistency

INSTRUCTIONS:
1. Combine all ingredients in a blender.
2. Blend until fully combined and smooth.
3. Pour and enjoy!

When it comes to making school lunches, we like that time to be organized and stress-free. When it comes to the actual lunch, we focus on healthy options that will fuel hungry tummies and get the kiddos through the day. And it’s always a bonus when the school lunchbox has a Star Wars twist!

When you’re making school lunches every single day it’s easy to fall victim to routine. We wanted to break free of the lunchbox rut and offer creative inspiration to blast boredom and present healthy kid-approved options.

This Planetbox lunchbox is a great tool for creating school lunches that are exciting and creative with a healthy twist. With each compartment, your child can have the perfect portions for a well-balanced meal. And, we totally love that meal prep is quick and easy and involves very little clean-up time. On today’s menu:

Stay tuned for more inspiration, but in the meantime, dust of those cookie cutters and get creative! Cut sandwiches into shapes, turn plain cheese into stars and hearts or add notes or messages to your little one. These simple touches are bound to make them smile!

There’s no doubt that Star Wars is on the current trend and most boys and girls are buzzing about the new release this week. I don’t know about you, but we already purchased our tickets and are ready to wait in line to assure a great seat! With all the hype about Star Wars, we decided to add some of that spacey inspiration into this room makeover that was created for an eight-year-old Star Wars fan.

The result is a mix between modern and vintage with hints of the theme that don’t take it overboard. The room is calm and welcoming and can easily transform into a room for an older boy.
