Foodkins // Holiday Traditions and Creamy Coffee Flan with Nestlé

Flan is a traditional dessert that my family makes every year around the holidays. It is a tradition to gather around the table and talk about all our wishes and dreams for the upcoming year and to reflect on the the blessings and sometimes hardships we endured together.
In Brasil, it is custom to celebrate Christmas on the 24th all the way through the 25th. We usually gather grandma and grandpa, aunts and uncles, cousins and family from near and far to laugh, celebrate and to eat together.
This year we will be making one of our favorite flan recipes – creamy coffee flan! I hope you make this with your loved ones and enjoy the sweet and creamy taste of this savory dessert.

Creamy Coffee Flan
Caramel Sauce
1 cup sugar
1/4 cup water (optional)
Flan
1 can of La Lechera sweetened condensed milk
1 can of Nestlé Carnation evaporated milk
4 Tsp. of Nescafé
10 egg yolks
Preheat oven to 400°F.
For the caramel sauce:
Place sugar and water into a medium sized saucepan. Let the sugar and water heat up on medium heat. As soon as the sugar starts to dissolve, gently mix it so the sugar doesn’t burn.
Once the sugar has dissolved, the sugar mix will turn into a dark caramel color. Remove from heat and carefully pour into a flan baking pan or 6 small baking dishes. Set aside.
For flan:
In a small bowl, combine your Nescafé and a can of Nestlé Carnation evaporated milk. Mix together and put aside.
In another bowl, whisk together 10 egg yolks and then add a can of La Lechera sweetened condensed milk. Mix together.
Now combine all the ingredients together (Nescafé, evaporated milk, egg yolks and sweetened condensed milk). Mix together.
Pour the flan into your flan pan or baking dishes.
Take a casserole dish and place 2 inches of water in it. Now place your flan pan or baking dishes  in the casserole dish.
This creates a water bath and the steam from the water is what cooks your flan!
Place your flan in the oven for 45 min. Take out the flan and insert a knife trough the middle. When the knife comes out clean your flan is perfect!
Let cool (we love to eat flan cold) and serve!

We are getting ready for Easter over here in North Carolina and we LOVE Carrot Cake here at the Kipphut House. Easter is a great time to make carrot cake!
You don’t have to make your carrot cake from scratch ( if you can, you’re amazing!) but you can also buy a mix. I found some really yummy mixes from Homegoods the store. They were so good that I went back to get more, but they were all sold out.

I used a heart-shape silicon bake wear left over from Valentine’s day ( why not? lol) &
Red & Yellow Food Coloring to make my White Cream Cheese Frosting …. ORANGE!
I then took green construction paper and folded it in half. On the side without the crease, I cut fringes on the paper for the “carrot stem”.
Then I took a knife and made a slit at the top of the “heart” and stuck in the green paper stalk.
That’s it!
Enjoy!

Happy St. Patrick’s Day friends!
Growing up with Irish blood, we have always celebrated our Irish heritage BIG in our home. We went to our local St. Patrick’s parade every year and we gathered with friends and family for a feast that my Mom would make.
Since having a family of my own, I continue to celebrate and teach my children of the Irish culture.
My Dad use to say , ” the Irish aren’t particularly known for their exquisite cuisine…. you rarely hear people say , let’s go to the Irish restaurant”. Although I myself find a lot of Irish dishes very yummy, sometimes little ones don’t find lamb, corned beef, veggies, potatoes and cabbage very “yummy”. This year in addition to our traditional Irish food, I decided to make Shamrock shakes for the girls ( even though they aren’t really Irish). HEALTHY Shamrock shakes that is….. for the whole family! We have been making them all week and like pairing it with some tradional Irish soda bread. To make your very own healthy shamrock shake, follow the recipe below:

+ 1 overripe large banana, peeled and frozen
+ 1/8 tsp to 1/4 tsp pure peppermint extract (I like 1/4 tsp)
+ up to 1 cup almond milk ( or milk of choice)
+ 1/4 cup frozen spinach
+ Green Food Coloring ( optional)
and blend!
Makes one big serving.

She came came up with this adorable Valentine’s Day craft for my soon to be Valentine’s Day birthday girl, ELSIE! We also had baby Ethan join in our fun and celebrated our craft and photos by getting some ice cream. Here is how you can get this fun and fabulous Valentine’s Day look in a few EASY steps!

1. Visit your local Dollar store ( or craft store) for headbands and glasses.
and CANDY Hearts.
2. Use a hot glue gun to bedazzle your items with CANDY ! If you are doing this with small children, you can also use Glue Dots for them to press the candy on instead of hot gluing.
3. Wear your super fun and sweet fashion pieces and do a HAPPY DANCE!
4. EAT leftover CANDY ! HAPPY VALENTINE’S DAY

If you are looking for quick, fun , easy , and cheap ways to decorate your house this holiday….. then you have come to the right place! As a busy working Momma with two toddlers and a newborn, time and money is precious. I wanted to share a few ways that I was able to Ho Ho Ho my home without taking up too much time, and without breaking the bank.

1. Make Your Own Garland.

We made stars out of pipe cleaners and tied them to string. You could tie anything to string. Hand made snowflakes to store bought shapes and objects.

2. Wrap it up!

Decorating with Gift Wrap….We wrapped the inside of the faux chalkboard fireplace in the girl’s room. You can use it to wrap over doors, framed wall art, to cover the tops of tables, or even cut into shapes and put on the wall!

3. Put a Wreath on it!

I bought this real Boxwood Wreath for under $10.00 from Trader Joe’s. I added an ornament from Target and some Ribbon ( left over from my wedding years ago, awwwww) and TaDaa! A special wreath for your front door.
If you are an advanced crafter, you could even make your own wreaths. You could use store bought items to make a wreath or found and foraged items from your back yard! I used real Boxwood to make mini Boxwood wreaths for all of our windows and some walls. It definitely took longer to make these than I wanted but the end result was totally worth it. I also threw in a cute little photo of my son Ethan.

4. No Gift Wrap ? No Problem!

Wrap gifts with paper items around your home. I used a Trader Joe’s paper grocery bag and used/old “stendig ” calendar pages. Top them off with something fun , like some free greenery from your yard to some store bought pom-poms and then you got yourself some fun gifts from re-purposed items and paper!

5. Throw it up! Some garland that is.

Real or fake…. it doesn’t matter. If you want to get fancy, wrap it in lights! Also, enjoy a pic of some cuties.

6.Christmas Past ….

Boys are so FUN and in my house it’s all about Star Wars, black and white and things that roll. I have picked out a few things I have gotten my children or have my eye on. If you are needing some fun ideas I hope this inspires you a bit and that you find something you would enjoy giving as well!

One of my must give gifts are the  J-Bird Harem Pants (item 4). We love these in my house because they are super soft and the modern geometric bird print is just too cool. They are perfect for girls too (high five) and are made in Los Angeles from only surplus French terry fabric. What’s better than made right and helping to reduce impact on the environment?!

The mini puppet theater (item 10) is something we have wanted as a family for a while. I love that it’s small and compact and easy to pull out. My boys are really going to enjoy putting on little shows and I will also use it during homeschool to help teach lessons and to make learning more fun! This tabletop shadow puppet theatre comes with classic stories like Little Red Riding Hood, The Three Little Pigs, Goldilocks and the Three Bears and Jack and the Beanstalk!

And that Star Wars calendar! Such a fun way to bring in the new year don’t you think?
